Mozza, a new Italian paninoteca, is set to open this summer on MLK Street in St. Pete, bringing a unique dining experience to the area. The concept, founded by local cheesemaker Michael Deininger, known as 'Mozzarella Mike', aims to capture the essence of traditional Italian 'paninoteca' culture. Deininger's journey began with pop-ups and catering events, showcasing his freshly made mozzarella and receiving positive feedback on his sandwiches. This led to the decision to expand and create Mozza, a place where people can enjoy simple yet high-quality Italian sandwiches, fresh mozzarella, and a curated selection of Italian goods.
What makes Mozza stand out is its focus on authenticity and quality. Deininger describes it as a 'traditional Italian paninoteca', emphasizing the importance of good ingredients and a relaxed atmosphere. The shop will feature daily-stretched mozzarella, ensuring it remains fresh and milky, and the menu will include classic Italian-American sandwiches and creations centered around these fresh cheeses. Deininger aims to create a space that feels approachable and inviting, encouraging people to sit down and enjoy a curated experience rather than just grabbing a quick bite.
The 630-square-foot space will offer a small dining area, a bar, and an outdoor seating area (pending city approval). Mozza will also provide a selection of imported olive oils, olives, spreads, conservas, soft cheeses, and other Italian pantry items, sourced through specialty provisioners. These ingredients are rarely found in local markets, adding to the uniqueness of the experience. Additionally, Mozza will have a small wine program, allowing guests to pair their sandwiches and cheeses with glasses of wine on-site.
Mozza's opening will further enhance the vibrant food scene on MLK Street, joining a growing list of independently owned restaurants and bars. The area is already home to popular spots like 86 Wine Bar, The Violet Stone Pizzeria, Calida Kitchen & Wine, Pineapple Espresso, Blush Tea & Coffee, and Golden Isles Brewing. Deininger expresses his gratitude for the support received from Mozzarella Mike's early followers and emphasizes the dream-like nature of the project's realization.
